Chocolate Eclair Dessert

Ingredients
22.5 sheets Low-Fat Graham Crackers3.25 C. Skim Milk (divided)2 ea. 1.34 oz. GV sugar free French Vanilla pudding mix1 ea. 8 oz. fat free Cream Cheese1 ea. 8 oz. fat free Whipped Topping2 Tbsp. Light Margarine2 Tbsp. Honey2 oz. Unsweetened Chocolate1 C. Splenda (equal measure for baking)
Directions
Spray the bottom and sides of a 9 X13 pan and line with 7.5 Graham Cracker Sheets. Combine 3 cups of Skim Milk, pudding mix and cream cheese in a large bowl. Beat at low speed until smooth and thick. Stir in the Whipped topping and spread half of the mixture over the arranged Graham Crackers. Cover with another 7.5 sheets of Graham Crackers and cover with the remainder of the mixture. Top with another 7.5 sheets of Graham Crackers.

Melt the Chocolate in a medium saucepan. Add 1/4 C. Skim milk, the honey, margarine and Splenda and beat until smooth. Spread over the top layer of Graham Crackers and chill for 4 hours. Makes 15 nice size servings.
