Fred's Salmon Cakes

Ingredients
1-14.75 ounce can of Salmon2 large eggs10 Whole Grain Saltine Crackers2 tbsp Olive Oil1 tbsp Old Bay seasoning
Directions
Mix the ingredients into a bowl and separate into seven balls and refrigerate for 30 minutes. Fry each patty on med high heat for 3 to 5 minutes or until lightly browned.

Recipe makes 7 patties at about 160 calories each.

    This was pretty good. DH liked it, so its a keeper. Instead of 1-14oz can, I used 3-5oz cans because they were boneless & skinless. I added a TB of flour to help hold it together. Used a 1/3 measuring cup and got 6 servings. Leftovers served with grits the next morning. - 5/9/11
