Baked Coconut Shrimp

Ingredients
12 medium raw shrimpplain unsweetened coconutgarlicpanko breadcrumbsegg whitepepper
Directions
Makes 2 servings of 6 shrimp each

preheat oven to 500
spray baking sheet with olive oil
peel, clean and butterfly shrimp
finely chop garlic clove
beat egg white in a bowl
in another bowl mix breadcrumbs, coconut, pepper, garlic and cumin

Dip shrimp in egg white then in dry mixture and lay on baking sheet

Cook for about 4-6 minutes on each side
