Red Potatoes with Green Beans

6 medium red potatoes, scrubbed, but with skins left on1qt green beans1 cup chopped onion1 clove garlic, minced1tbs olive oil1tsp salt1/4 tsp black pepper
Srub and cut up potatoes into 1-1 1/2 inch pieces
Add oil to bottom of 4qt pan, heat over med heat
add potatoes, onions, garlic, salt and pepper, and stir. Add a little water (1/4 cup or less) to keep the potatoes moist. After about 5 minutes, add green beans, and stir. Cover and cook until tender, stirring occasionally, and adding small amounts of water as needed. Makes 6 1 1/2 cup servings
