Spicy Breakfast Potatoes

Ingredients
4 cups small diced potatoes (about 1 lbs)1/2 cup diced onion1/2 cup diced green bell pepper2 tbsp Extra Virgin Olive Oil3 cloves minced garlic2 diced jalapeno peppers (seeded or not, your taste)1/2 tsp ceyenne pepper1 tsp salt2 tps pepper1/4 cup water if needed
Directions
In a 12" skillet, add all ingredients EXCEPT water. Mix to coat all pieces with the oil. Cover and cook over low to medium heat. Stir occasionally. About half way through cooking time, (you can tell by how soft the potatoes are) add water and stir. Done when potatoes are soft.

Dual advantage to the water. It helps steam the potatoes during cooking and it will also loosen up the stuck bits of potato to the bottom of the pan for easier clean up.

Makes 7 1/2-cup servings.
