Tofu Shirataki Noodle Stir Fry

Ingredients
1 cup cooked chicken1 tbsp grapeseed oil, or oil of your choice1 bag oriental style vegetables (thawed)1 bag of tofu shirataki noodles2 tbsp peanut butter (or less to your taste)2 tbsp lite soy sauce1/2 cup low sodium chicken broth1 tsp ginger root or ground ginger
Directions
Heat chicken in pan with oil. Then add peanut butter, chicken stock, ginger, and soy sauce. Stir until all is mixed well. Add noodles and vegetables. Cook until heated through and serve.
