Mock Hollandaise Sauce

Ingredients
3 Tbs Butter3 Tbs Flour1 C Nonfat Milk2 Egg Yolks2 Tbs Lemon JuiceSalt & Pepper to taste
Directions
1. Melt the butter over medium heat. Add flour and cook 1 min while whisking.
2. Remove from heat and add milk. Whisk until smooth.
3. Return to heat and beat in egg yolk. Cook for one minute.
4. Stir in lemon juice, salt & pepper.
