2LBS BONELESS SKINLESS CHICKEN BREAST1/4 tsp BLACK PEPPER1 TBSP ALL PURPOSE FLOUR1 TBSP OLIVE OIL1 CUP CHOPPED ONION1 CUP CHOPPED CELERY1 CUP CHOPPED GREEN PEPPER4 tsp MINCED GARLIC1/4 CHILI POWDER1/8 tsp GROUND CLOVES1/8 tsp GROUND RED PEPPER1 BAY LEAF1 CAN (16 OZ) WHOLE PEELED TOMATOES
Heat olive oil in nonstick pot (5 qt) and cook chicken 3-4 mins per side or until browned. Remove chicken and add garlic, celery, onion, green pepper and cook 2-3 mins until softened. Add all spices and tomatoes, breaking tomatoes with the side of your spoon. Return the chicken to the pot and bring to a boil. Reduce heat cover and simmer for 35 minutes. Remove bay leaf before serving. Spoon over rice and serve.
