Kitty's everything muffins

1 c grated zucchini1/2 c grated carrot1/4 c canola oil1/3 c honey2 eggs discard 1 yolk1/4 c nonfat plain yogurt1/2 c raisins1/2 c chopped pecans1 c ww flour1/2 c oat bran1/2 c oats1 tbsp baking powder1/4 tsp salt1/4 tsp nutmeg1/2 tsp cinnamon
Combine eggs, honey, canola oil, yogurt, raisins and pecans. Add grated zucchini and carrots - mix well.
In a separate bowl mix flour, oat bran, oats, baking powder,
salt, cinnamon and nutmeg.
Combine wet and dry ingredients until moistened.
Spoon into lined muffin tin, bake at 375 for 25 minutes.
Makes 12 muffins.
