Baked Chicken with White Beans, Tomatoes, and Avocado

Ingredients
2 T olive oil4 (5-6 oz) boneless skinless chicken breasts2 medium chopped onions1 (14.5 oz) can undrained Italian style stewed tomatoes1/2 t Italian seasoning2 - 14.5 oz cans rinsed white beans1 thinkly sliced avocado
Directions
Heat oven to 350.

In a large ovenproof skillet, heat oil on medium. Add onions and cook 10--12 minutes, or until borwned and crisp. Stir in tomatoes and juice and Italian seasoning and boil, uncovered, 1 minute. Stir in beans and bring to a simmer. Place chicken in skillet among beans, spooning some of the bean mixture over the chicken. Cover chicken and beans with avocado. Bake, uncovered, 25-30 minutes or until chicken is no longer pink and juices run clear.
