Oats and Nuts Granola

6 cups rolled oats1 cups broken pecans/ walnuts/ cashews/ sunflower/ pumpkin seeds1 cup slivered almonds2 tsp cinnamon1/4 tsp salt3/4 c honey or maple sugar1/2 cup olive or canola oil1 cup raisins1 cup dried apricots
Makes 2 1/2 pounds or approx 10 cups
Pre-heat oven to 300 degrees.
Mix the dry ingredients together including the spices. In a cup or bowl whisk the honey and oil together to combine. Add it to the dry ingredients and mix by hand. Divide the mixture between 2 pans that are sprayed with non stick oil. Place the pans in the oven and rotate them every 15 minutes for a total of 45. Let cool completely on pans before transferring to an airtight storage container.
