Ginger Pork Lettuce Wraps

2Tbs diced Ginger root5 gloves garlic5 scallions chopped (include green tops)1/3 c Kikkoman Less Sodium Soy Sauce1/3 c granulated sugar2/3 c water1lb pork tenderloin (small dice)4oz Raccontoa 100% Whole Wheat Capelini2 medium carrots grated1 head of red leaf lettuce
Mix first 6 ingredients together and bring to a slow boil. Turn off heat. Let cool. Once cooled add pork and refrigerate for at least 1 hour. Put pork and all mixture in pan and add carrot and cook. Add cooked pasta. (I cook mine and then cut up into small pieces) Once pork is cooked add noodles.
Serve with lettuce to make wraps.
Yields 5 cups. Each serving is 1.25 cups.
