1 Large fresh egg, beaten25ml Skimmed Milk 50 Grams red bell peppers, sliced50grams Green bell peppers, sliced 25 Grams low fat mature cheddar cheese, grated(save a little to put on top before grilling)Salt & pepper to taste.20 Sprays frylight extra virgin olive oil spray
Beat the egg in a small bowl
Add the skimmed milk and whisk,
Add the sliced peppers and grated cheese
Salt & pepper to taste
Add the frylight to a frying pan and heat on a medium heat
Pour in the mixture and cook until fairly solid on the bottom
Add the saved cheese
Put the grill on high and pop under the grill still in the pan until cooked on top.
Place on a plate.
Serve with either baked beans or just a small amount of ketchup or brown sauce.
You can add more veg if required. Just adjust the nutrional information.
