Mussels in Spicy Tomato Broth

Ingredients
2 tsp olive oil3 Tbsp minced garlic2 scallions, diced2 Tbsp dried parsley2 tsp oregano1/2 tsp crushed red pepper flakes1 tsp hot sauce28oz diced tomatoes1 cup white wine1/2 tsp salt3 lbs mussels, scrubbed clean & debearded
Directions
Heat the oil in a saucepan large enough to accomodate the mussels. Cook the garlic and scallions over moderate heat until they begin to change color, about 5 minutes.

Stir in the remaining ingredients except the mussels. Bring to a boil, then reduce to a simmer. Cook, covered, for 15 minutes. Add the mussels to the pot, cover and simmer for 5 to 6 minutes, until mussels open. Discard mussels that do not open.

Using a large spoon, transfer thte mussels to servings bowls and spoon sauce over the mussels. Eat immediately.
