Prawn, cherry tomato and spinach curry

1 clove garlic - sliced1.5 cm root ginger peeled and chopped1/2 green chilli deseeded and chopped2 crushed cardamom pods2 curry leaves100g cherry tomatoes - halved160ml coconut milk200g prawns250g spinach - fresh
makes 2 generous servings
add garlic, ginger, curry leaves and cardamom to oil and heat
add tomatoes and cover with spices mix
add coconut cream and simmer for 1 mins
add prawns and spinach and simmer gently until prawns cooked through and spinach wilted
serve with rice
