1/2 cup onion, diced2 tsp olive oil3 cups zucchini, grated2 cups oats1/2 cup wheat germ1/2 cup roasted sunflower seeds1/4 tsp salt (not necessary if using salted sunflower seeds.)2 large eggs, beaten1/4 cup swiss or cheddar cheese, grated
Sauté onions in olive oil on low heat until translucent. Meanwhile, combine zucchini, oats, wheat germ, sunflower seeds and salt; mix well. Add eggs and onions, mix well. Top with cheese. Place into a greased loaf pan and bake at 375º for 30 minutes.
