Sweet and Sour Chicken

-1 pound skinless boneless chicken breasts, cut into 1 inch pieces-1 20 ounce can pineapple chuncks-1/4 cup soy sauce-1 cup green onion, cut into pieces-1 large green pepper, cut into strips-3 TBS honey-1 tsp ginger-1 tsp garlic (or to taste)
1.Drain pineapple and set aside the juice.
2.In a saucepan heat juice, soy sauce, honey, ginger, and garlic for about 5 minutes and then add in the chicken and cook for 10 minutes or until chicken is fully cooked.
3.Turn the heat on low and add in the pineapple chunks, simmer for about 5 minutes.
4.Remove from heat, stir and serve.

My entire family enjoyed this recipe! I used sweet yellow onion insead of green onion and cut it into one inch pieces. Added the the peppers and onions with the pineapple to the chicken mixture after it had cooked, then simmered for three minutes. Served over rice. Simple and very good...YUM-O!! - 8/12/11

Really Good. Used only half of the fruit and crushed instead of chunks. Also used only about 3/4c of juice instead of all and next time will use even less as it was still a bit much.
It didn't say when to use the pepper so I added it to the sauce and let them cook a bit before adding the meat. - 7/20/10

making this recipe was so quick/simple. I used a 12oz can of crushed pineapple, it changes the texture. use 3 tblspns grated ginger it makes a big difference. throw in a spicy pepper the heat gives it a great flavor. a tblspn of garlic was enough. Add onions 3 mins after chicken to avoid soggyness. - 1/27/10
