Peanut Butter Protein Muffin

Ingredients
1/3 cup plus 2 teaspoons self-rising flour1 talbespoon Baking Splenda1/4 cup skim milk1 egg, slightly beaten3 tablespoons chunky peanut butter1 teaspoon margarine6 tablespoons unflavored protein powder
Directions
Preheat overn to 400 degrees

IN large bowl sift together flour and sugar; add remaining ingredients and stir until combined (batter will be lumpy).

Do not beat or overmix.

Spray muffin pa cups with nonstick cooking spray; fille each with an equal amount of batter (about 2/3 full).

Bake until muffins are golden brown, about 20 minutes.
