Walnut-Craisin Oatmeal Cookies

2 cups old fashioned oatmeal1 cup of flour1 cup brown.5 cup granulated sugar2 cups chopped walnuts.75 cup of coconut oil1 large or 2 medium fresh eggs1 teaspoon vanilla2 cups craisins (dried cranberries).5 teaspoon baking soda.25 cup water
Cream sugars, coconut oil, vanilla, eggs and water. In a separate bowl combine dry ingredients thoroughly; and add to sugar mixture until well combined. Prepare cookie sheet with non-stick spray; drop by rounded teaspoonful. Bake at 350 for 10 minutes or until light golden brown. Let stand 1 minute before removing to rack to cool. Makes 48 cookies. 1 serving = 1 cookie
