French Toast

Ingredients
2 eggs1 cup 2% milk1/2 tsp vanilla1 to 2 tbsp butter4 thick slices bread1 tsp (each) cinnamon & sugar (optional)
Directions
1. Break the eggs into a wide, shallow dish and add the milk and vanilla. Whisk well.

2. Melt half the butter in a frying pan. When the butter begins to foam, quickly dip both sides of the bread into the egg mixture, letting the excess run off, then fry in the butter for 1-2 minutes, or until the underside is golden. Turn the bread and cook the other side.

3. Serve sprinkled with cinnamon and sugar (optional).

**Also can top with syrup, fresh fruit, or lemon juice & sugar.
