Shepherd's Pie

Ingredients
1 lb. lean ground beef1 envelope dry onion soup mix1/2 C low sodium beef broth1 10oz. pkg. frozen peas & carrots6 potatoes, peeled & cubed1 C 2% milk1/2 C buttersalt & pepper to taste
Directions
Brown ground beef. Just before finished stir in onion soup mix and beef broth. Cook on medium heat until reduced.
Prepare peas and carrots according to package directions.
Boil potatoes until done, mash with milk and butter.

In 9x9 pan, layer beef, peas & carrots, and top with mashed potatoes. Bake @ 350 for 30 minutes. Serves 8 - 1 C servings
