Fat-Free Creamy Vegan Potato Leek Soup

6 cups vegetable broth (I use home-made, but any fat-free variety would be great.)7 small potatoes (or 3-4 large ones) chopped roughly3 leeks (sliced thinly)3-4 cloves of garlicA splash of 'milk' of your choice (i used original unsweetened almond breeze)Dill, Salt, Pepper, or other herbs and spices of your choices
In a large soup pan, boil the potatoes (after you've chopped them up) in the broth, and let them cook until they are soft. Once they're soft enough, take a potato masher or a big wooden spoon and smash them up. I don't blend it because i like the chunkier texture.
In a frying pan, sautee the garlic and leeks with a couple tbsps of water (no oil needed). Once they are soft, add to the soup pan with the broth and potatoes. Add your splash of 'milk', dill, salt, pepper, and let it all simmer for about 10-15 minutes.
Makes about 10 1-cup servings.
