Applesauce Raisin Muffins

2 cups all-purpose unbleached flour2 teaspoons baking soda1 teaspoon baking powder2 teaspoons cinnamon1 teaspoon nutmeg1/4 teaspoon ground cloves1 cup raisins, packed1 stick salted butter, softened1 cup sugar1 large egg, at room temperature2 teaspoons vanilla2 cups unsweetened applesauce
It may be easier to make this recipe with an electric mixer, but I do not personally own one.
Preheat Oven to 350 degrees F.
Melt the stick of butter in a microwave safe dish, stopping every 20 seconds to stir until smooth. Mix in sugar, egg, and vanilla, one at a time, until smooth. Add the applesauce and raisins, then stir in the flour and spices a little bit at a time.
If necessary, lightly grease your muffin tin before placing the batter inside. If you overgrease, your muffins will become soggy. Bake for 25-30 minutes.
Recipe makes one 12 cup muffin tin.
