Curves Coconut Peanut Chicken

Ingredients
1 Lb Chicken Breast, Diced1 Cup Light Coconut Milk1/4 Cup Crunchy Peanut Butter1 Tsp Red Pepper Flakes (or more if you like spicy)1 Tbsp Ginger10 Oz Frozen Broccoli, Steamed1 Cup Carrots, Shredded
Directions
Saute Diced Chicken in 1 Tbsp Oil until cooked through.

Combine: Coconut Milk, Peanut Butter, Red Pepper , & Ginger. Add to Chicken and cook until well combined.

Place Carrots on top of the Broccoli and spoon Chicken Mixture over the top.

Serve with an Orange on the side.



NOTE: Might be good with Mushrooms in it too!! I accidentally used the whole can of Coconut Milk, so there was lots of sauce and it was runny but still good.
