Teriyaki Stir-fry with noodles & pork

1 lb pork tenderloin, fat removed, cubed1 package stir-fry rice noodles2 tbsp canola oil1 small onion, sliced3 cloves garlic, minced1 tbsp ginger, minced1 package frozen vegetables, stir-fry or asian style1 cup chicken stock1/4 cup teriyaki sauce2 tbsp each cornstarch & rice vinegar2 tsp sesame oil1/2 tsp salt & hot pepper sauce
For sauce: In bowl, whisk together stock, teriyaki sauce, cornstarch, vinegar, oil, salt & hot pepper sauce. set aside.
Heat oil in wok or large pan. Add pork and stir-fry pork until no longer pink, inside, 5 minutes. with slotted spoon, remove to bowl. Cook noodles according to package.
Add onion, garlic and ginger to pan. sitr-fry until golden, about 1 minute. Add vegetables and stir, cove and steam until tender-crisp. About 5 minutes.
Return pork to pan, add noodles and toss to combine. Pour sauce, cook, stirring until thickened, I minute.
Serves 6-8
