Jessie's Light Taco Salad

Ingredients
1 lb. Ground Sirloin 1/2 Cup chopped onion1 Can Dark red kidney beans1 packet Old Elpaso Taco Seasoning MixSmall head of lettuce or 16 oz bag of prepared chopped lettuce1 Cup Cherry tomatoes - diced or other diced tomatoes1/2 Cup Light Catalina Salad Dressing8 oz. 2% Shredded Cheddar Cheese1 Cup Broken Baked Tostitos Chips (scoops or rounds)
Directions
Brown ground beef and onion in a non-stick skillet over medium heat. Drain off excess grease. Add one can of dark red kidney beans - drained. Cook over low heat for 10 minutes until beans are warmed.

While meat is cooking, mix into a large bowl lettuce, tomatoes, catalina dressing, cheese and broken tostitos chips.

Serve one of two ways: Add meat/bean mixture to the salad and toss - or serve individually on top of salad mixture. Enjoy!

    I changed this recipe somewhat because I'm on a controlled diet...I used ground turkey instead of sirloin and taco sauce instead of catalina dressing. I rinsed the canned kidney beans before adding them. And I made my own taco seasoning to cut down on salt. It was AWESOME! Great idea! - 2/8/10

    Great, light way to enjoy taco salad. Very filling and relatively low in calories if you go easy on the beef and tortilla chips and heavy on the veggies. Also great topped with homemade salsa instead of just tomatoes! - 1/30/10
