Olive Oil, 1 tbspOnions, raw, 1.5 cup, choppedCelery, raw, 1 cup, diced1 tbsp ground basil1 tsp oregano1 tsp basilPureed Tomatoes, 3 cup Boiling water, 3 cupRapunzel Vegan Bouillon No Salt Added, 2 serving3 tbsp dry red wineChickpeas (garbanzo beans), 1.5 cupSummer Squash, 1 cup, sliced Zucchini, 1 cup, sliced
Makes about 6 1/5 cup servings.
Saute onion, garlic and celery in olive oil for 5-8 minutes. Boil 3 cups water. Add bouillon cubes to boiled water and stir to dissolve - this is your stock.
Add herbs to saute mixute. Toss in chopped tomatoes, red wine, and stock. Cook over medium heat for 5 minutes.
Add garbanzo beans, squash and zucchini. Cook until heated through.
Great with crusty bread and a dusting of parmesan.
