Baked Haddock w/ Maine Shrimp Sauce

Ingredients
1 lb fresh Haddock filletItalian seasoned bread crumbs or Panko crumbs1 egg1/2 cup milk______________________________________________Maine Shrimp Sauce:1/2 lb Maine Shrimp meat2 tblsp flour1 1/2 tbls butter1/2 tsp salt1/4 tsp white pepper1/2 cup cream1/2 tblsp dry sherry NOT cooking sherrypinch nutmegpinch paprika
Directions
Rinse Haddock under cold water & pat dry. Mix egg & milk together in bowl big enough to coat fish in. In another bowl place seasoned bread crumbs. Dip pieces fo fish in milk & egg mixture & then coat fish in the crumbs and place into lightly greased baking dish.

Place in a preheated 400* oven for 15 min. Remove from oven and spoon Shrimp sauce ( see below for recipe) over top and place back in oven for 5 min. Remove and serve

Maine Shrimp Sauce:
In saute pan over med-high heat melt 1 tblsp butter, when hot, add maine shrimp meat & stir around for 30 sec to 1 min depending how hot yhour pan is, (do not over cook shrimp), remove to a dish & set aside. Reduce heat to med & add the rest of the butter, when melted, add the flour, salt & pepper, mix till well blended. Then add cream & milk, cook stirring constanty until it begins to thicken, add the sherry & cook for 1 more min. Then add the Maine shrimp meat, a dash of nutmeg & a dash of paprika, mix well & remove from heat.
Serves 4 to 6 depending on appetites and portions.

    Just tried this and there is a measurement missing for the milk in the shrimp sauce - We guessed a 1/4 cup, but i think that was wrong. plus we started with cooked shrimp already, by the time it baked it was too well done and overpowered the fish. - 8/5/12
