Orange Teryaki Chicken and Vegetables

Ingredients
Sauce:1/4 C low sodium soy sauce1/4 C balsamic vinegar1/4 C orange juice1/4 C water2 T honey2 T lime juice1 tsp ground ginger3 cloves garlic, mincedDish:2 boneless, skinless, chicken breast2 cloves garlic1 Stalk broccoli, chopped1 C chopped onion1 med red pepper
Directions
Cook chicken breast (sometimes I cut it in cubes or strips), onions, peppers and garlic in olive oil, season to taste with salt and whatever else you like...I use tarragon & ginger. Prepare the sauce while the chicken is cooking, then pour over the chicken & add broccoli.
Simmer for about 20 minutes. Serve over brown rice. You can vary the vegetables to your liking as well.

    I cooked this tonight but doubled everything to feed the whole family. I'm thinking maybe I shouldn't have doubled the basalmic vinegar though. It was good, but the vinegar was much too strong. - 2/24/10
