Adobe Chicken

Ingredients
¾ c. fresh lime juice (about 6 limes)6 garlic cloves, minced2 t. salt1 T. oregano1 t. ground cumin1 bay leaf, crumbled1 t. ground pepper8 skinless, boneless chicken breasts
Directions
Combine the ingredients except chicken in a large zip-close freezer bag; add the chicken. Squeeze out the air and seal. Refrigerate, turn occasionally, 1 hour (or overnight).

Preheat oven to 375 degrees. Line a shallow roasting pan with foil and spray w/nonstick spray.

Remove chicken from marinade, shaking off the excess, discard the marinade. Arrange the chicken in the pan. Bake until firm and the juices run clear when pierced with a fork, 25-30 minutes.
