Tempeh Chicken Salad

Ingredients
tempeh, Lightlife organic, garden veggie, 4 oz Red Onion, Fresh, 1/4 cupLight Mayonnaise, 1 TbspMustard, 1 TbspBell Pepper, Red - 1/4 cupGround Cumin - 1/8 tspGarlic, 1 clove Salt, 1 dashPepper, 1 dash
Directions
Boil the tempeh for 5 minutes, then rinse with cold water and crumble into a bowl. All the remaining ingredients and mix well. Refrigerate until cold.

Makes 3 servings, about 1 cup per serving.

    I enjoyed this recipe. A different way to enjoy tempeh. I used 1/2 the mustard b/c I'm not much of a fan of it. Also added a little hot sauce to spice it up. I served half of it over salad greens with a little balsamic. Will probably put the other half in a sandwich. Thanks! - 2/10/10
