Panini Grilled Barbecue Beef or Pork Sandwich

Ingredients
1 tbsp Extra Virgin Light Olive Oil1/4 chopped onion1/4 cup chopped sweet peppers (red green or yellow)1 garlic clove - minced8 ounces precooked chopped beef brisket or lean diced pork (without sauce) 1/2 cup yellow sweet corn (canned, fresh or frozen)1/2 cup barbecue sauce8 thin slices of whole wheat sourdough bread (or any other type of sliced bread/ small roll)
Directions
Sauté onion & peppers in a skillet on medium until onions are clear. Add the garlic and cook an another minute or two. Add the meat, corn & barbecue sauce. Bring everything to a simmer on low for 5 minutes.

Divide mixture into 4 portions. Spread mixture on a slice of bread and top it with another slice. Place the sandwich on a hot Panini grill until the bread is toasted on each side.

Make 4 sandwiches

Note: You can substitute any lean meat for the beef. This is also delicious as a whole wheat tortilla wrap or in a pita pocket. Try adding 1/2 can of black bean to the meat too. This will stretch the number of servings to 6 and add a little fiber.

    Thanks for the feedback. You really can use just about any type of bread or small roll with this sandwich. I make my own sourdough, so that is what I usually add to my recipes. I'll edit the recipe to included the other bread options. I'm really glad you enjoyed it.
