Creamy Pizza Soup

Ingredients
1 cup chopped carrots2 cups chopped broccoli3 cups chopped zucchini1 can stewed tomatoes (with or without basil/added herbs)3 cups low-sodium chicken broth1 package fresh mushrooms (I used crimini mushrooms), sliced4 cups plain unsweetened soy milk
Directions
Chop veggies, and let all of them cook down a bit with some herbs to taste, except broccoli and mushrooms. Add the tomatoes if you haven't already, and then the chicken broth. Cook until zucchini gets tender, then add broccoli and let cook until tender. After that, blend it all together with a stick blender. Add mushrooms until they cook to a soft state, then the entire four cups of soy milk. Bring to a boil, then serve (about a 2-cup serving, ish). It's amazing.

    I made this recipe and it was OK, it needed some flavor. Didn't taste like any pizza I've ever had. I will make it again but will play around with some seasonings. - 2/8/10
