Chicken Breast with Butternut Squash and Bacon

Ingredients
2 cups butternut or delicata squash, cubed6 strips bacon, chopped6 cloves garlic, minced1/4 cup water3 tbsp unsalted buttersalt2 Chicken Breasts, no skin, trimmed, cubed
Directions
Melt butter in a cast-iron pot on medium heat. Add garlic and salt, sautee until soft. Add in bacon and cook until done, but still soft. Add butternut squash and water; reduce heat and simmer. Cook until squash is soft enough to mash with a fork.

When squash is soft, mash with a potato masher to make a thick "sauce." Add the chicken breast cubes and bring heat back up to medium, stirring occasionally. Cook until chicken is completely cooked.

Makes 4-6 servings.
