Low Fat Hummus

1 can goya garbanzo beans1/2 cup parsley1 Tbsp creamy peanut butterjuice of 1/2 lemon1/4 tsp salt
Drain the garbanzo beans, reserving the liquid.
Put drained garbanzos, parsley, peanut butter in a food processor. Process until finely chopped.
Add lemon juice to make a paste, a little at a time. ( you may or may not use all the juice.) If you have used all the juice and it is still not creamy enough, use the reserved bean liquid.
Add salt to taste.
Great on pita triangles, or with fresh veggies.
Makes 3 servings (approximately 1/2 cup per serving)
