Black Bean, Orange, and Cucumber Salad

Ingredients
1/4 cup extra-virgin olive oil1 clove garlic, pressed1 tsp salt2 15 ounce cans black beans, drained1 large cucumber, peeled and diced2 large oranges, peeled and diced(the original recipe calls for Juice of 1/2 lime that I didn't add to mine)
Directions
Combine the olive oil, lime juice, garlic, and salt in a large bowl. Mix

Add the beans, cucumber and oranges, toss gently so as not to break up the beans and serve.

    I love this salad! I never expected the flavors to work well together, but it tastes amazing. I only use a few tablespoons of olive oil and I rinse the black beans. - 2/20/10
