Ingredients
* *Campbell's Condensed Cream of Chicken Soup, 1.50 cup (remove) * *Breakstone's Reduced Fat Sour Cream, 8 tbsp (remove) * *Pace Picante Sauce - Chunky Salsa (Medium), 16 tbsp (remove) * Chili powder, 2 tsp (remove) * Chicken Breast, no skin, 8 ounces (remove) * *Fancy Shredded Cheddar and Monterey Jack Cheese, .50 cup (remove) * *Mission Whole Wheat Tortillas - 96% Fat Free "Heart Healthy", 6 serving (remove)# *Bush's Black Beans, Reduced Sodium, 1 serving (remove)# *Golden Sweet Whole Kernel Corn No sodium added, 0.5 cup (remove)
Directions
Stir the soup, sour cream, picante sauce and chili poweder in a medium bowl. Stir one cup of picante sauce mixture, chicken and cheese in a large bowl. Diveide chicken mixture among tortillas. Roll up the tortillas and place seamside up in 2 qt shallow baking dish. Pour remaining picante mixture over filled tortillas. Cover baking dish. Bake at 350 for 40 min or unitl enchiladas are hot and bubbling. Top with tomato and green pepper.

    I substituted a couple of things though. Used fat free sour cream instead of reduced fat, salsa instead of picante sauce, reduced fat cream of mushroom soup instead of cream of chicken. Reduces the calories by 100 per serving and still tastes amazing. - 3/23/11
