Parsley Potatoes

Ingredients
3-4 large yukon gold potatoes1T butter2T dried (or fresh) parsely2T half and halfsalt and pepper to taste
Directions
Chop potatoes into uniform large dice. Boil in salted water until tender. Drain. Add potatoes back to pan. Over heat, add butter, parsley and cream to potaoes. Mix well. serve hot.
Makes 8 1/2cup servings
