Baked Spaghetti Squash

Ingredients

1 spaghetti squash, halved lengthwise and seeded1 onion, chopped2 tbsp minced garlic2 cans stewed tomatoes1 tbsp dried basilblack pepper1 cup shredded mozzarella cheese1 cup shredded parm cheese
Preheat oven to 325*. Spray a baking sheet with cooking spray. Place squash halves cut side down on baking sheet.
Bake 35 minutes, or until a knife can be easily inserted. Remove and cool.
Meanwhile, spray a non-stick saucepan with cooking spray. Over medium heat, saute onion and garlic until golden-brown. Stir in tomatoes, basil, black pepper. Cook until desired consistency.
Remove squash strands with a fork. Layer in a baking dish sprayed with cooking spray, noodles, sauce, cheese. Repeat until all ingredients used. Top with cheese.
Bake for 20 minutes, or until cheese melts.
