Ingredients
1 cup dry breadcrumbs1/4 cup grated Parmesan cheese3/4 teaspoon salt1/4 teaspoon black pepper4 chicken breasts, skinned2 eggs, large
Directions
Combine the first 5 ingredients. In a separate bowl, softly beat eggs. Dip chicken in egg, and dredge in breadcrumb mixture. Place in a greased 12 x 8 x 2 inch baking dish. Bake at 350 degrees for 1 hour or until tender. Yields 4 servings.
