Hot Seafood Salad (similar to McCormick & Schmick's)

Ingredients
Salad~30 Spinach leaves, fresh, rinsed4 Romaine Lettuce, inner leaves, rinsed & chopped3 oz Bay scallops3 oz Shrimp, medium-small1 tsp Extra Virgin Olive Oil (for sauteing seafood)half Egg, hardboiled, sliced1 Medium tomato, slicedsalt & pepper (to taste)Vinaigrette1 tsp Brown & Spicy Mustard1/2 Tbs Balsamic vinegar1/2 Tbs Extra Virgin Olive Oil
Directions
Combine spinach leaves and chopped romaine and arrange on serving plate. Add sliced tomatoes and hard boiled egg slices around the combined greens.

Saute shrimp and scallops in 1tsp olive oil until cooked though. Season to taste with salt & pepper. Drain, and while still very hot, spread upon mixed greens.

Mix ingredients for vinaigrette. Microwave until hot (about 15-20 seconds) and drizzle over seafood and greens.
