4 boneless, skinless chicken breasts2T butter2T olive oilsalt and pepper to taste1 tsp poultry seasoning1/4 c. flour1 can reduced fat and sodium chicken broth2 T basil2 T parsley2 T lemon juice
Makes 4 servings
Place butter and olive oil in pan to melt and heat.
Take boneless, skinless chicken breasts and place them between 2 sheets of plastic wrap and pound until 1/4" thick. Season with salt and pepper and poultry seasoning. Dredge in flour. :Place flat in pan. Cook for about 4-5 min. on each side until browned. Remove chicken to plate. Take pan off heat. Add one can of chicken broth and return to heat., loosening bits of the bottom of the pan. Bring to a boil and reduce heat. Add basil and parsley. Have sauce reduce by 1/3. Add lemon juice and stir. Pour sauce over chicken and serve.
