Healthy Lentil Soup

1 cup of dry Lentils, washed and rinsed1 large Carrot4 medium Celery stalks1 Leek1 medium Onion3 tblsp Butter1 tblsp Olive Oil1/3 tsp Ginger1/2 tsp Tumeric1 tblsp Curry powder1 tsp Rosemary1 tsp Thyme1/2 tsp Marjoram1 tblsp Basil
Chop all vegetables into small cubes or slices.
Place butter and olive-oil in large saucepan. Heat on medium heat.
Add vegetables. Reduce heat to low and let vegetables slowly cook for about 15-20 min taking care to stir often.
Once the vegetables have given their flavour then add the Lentils, 4 cups of water and all the spices.
Heat soup to boiling point then turn heat back to let soup simmer for about 30 min.
Turn off heat, put the lid on and let stand for another 30-45 min.
Enjoy
