Poor Man's Lobster

Ingredients
2 pounds raw Cod fillets3 gallons water1 medium onion, diced1/2 cup lemon juice3 stalks celery, dicedolive oilSmart Balance margarine
Directions
Bring water to a boil. Add the fish fillets and re-boil for 4 minutes. Remove from heat, drain, and place cod on a cookie sheet. Brush with olive oil. Broil in the oven for 2 minutes. Serve with a melted heart healthy margarine or lemon juice for dipping. 2 fillets = 1 serving. Recipe makes 4 servings.
