Mushrooms, Garlic and Greens Scramble

1 tbsp Sunflower Oil (you can also use fat free broth for a lower fat option)6 med-lrg mushrooms, chopped (I like big pieces)3 cloves garlic diced (add less if you are not a garlic fan)2 cups greens (I used the baby spring salad mix)4 egg whitesSalt (omit if you choose)PepperSweet & Spicy Tabasco (finishing sauce)
Makes one pile of deliciousness all for you! Or you can split it if you want, but why?
Heat oil in pan. Add mushrooms. After a minute or two add garlic. Cook until desired tenderness. A dash of salt here does wonders for the long term flavor. Save your other dash for serving. Add a little pepper , too, if you want to keep the heat up. Once mushrooms are done, add greens and wilt. Once they are wilted and a nice bright color, add egg whites and scramble. Once the eggs are done, toss on a plate, drizzle a little Sweet & Spicy on it and maybe a dash of salt if you need. EAT!
