Black Bean Burgers

2 TBS Vegatable Oil1 Stalk Celery, chopped1 onion, finely chopped1 clove garlic minced1 15 oz can of Black Beans, rinsed and drained1 large egg lightly beaten1/2 cup of oatsSalt and Pepper
Makes 4 burgers
1. Preheat oven to 375 degrees. Line a large, rimmed baking sheet with foil & lightly grease.
2. Warm oil in a skillet over med-high heat. Add celery, onion and cook, stirring often (3-5 mins). Add garlic and saute for an additional minute.
3. Pour beans into a large bowl and use a fork to mash into a think paste. Add vegatables. Stir in egg and oats. Form into to 4 patties. Place on baking sheet and bake until firm and set (about 10 mins)
