Adapted Apple Walnut Raisin

• 4 egg whites + 2 teaspoons of oil• 1 whole egg• 1/2 cup canola oil • ½ cup applesauce• 1 ½ cup sugar • 1 teaspoon vanilla extract • 4 cups grated unpeeled apples • 1 ½ cups all-purpose flour • ½ cup whole wheat flour• 1 teaspoon baking soda • 1/2 teaspoon salt • 2 teaspoon ground cinnamon • 1/2 cup raisins • 3/4 cup chopped walnuts
1. Beat eggs whites and oil together in a bowl until foamy;
2. add apple sauce, sugar and vanilla and continue to beat.
3. Add apples, beating slightly; set aside.
4. Sift together flour, soda, salt, cinnamon and cloves;
5. add raisins and walnuts to flour mixture.
6. Add flour mixture to egg mixture; beat slightly.
7. Bake at 350° in greased 13-in. x 9-in baking pan. Check for doneness after 25 minutes.
Makes 12 servings or muffins
