No Bake Peanutbutter-Oatmeal Cookies

Ingredients
1/3 cup of Reduced fat cruncy Peanut Butter3 cups Old Fashioned Rolled Oats2 tsp Vanilla Flavoring1/4 cup of unsalted butter1/2 cup 1% milk1 cup Brown Sugar(few tbsp of chopped pecans) optional
Directions
Pour Oats in mixing bowl. In a medium size saucepan combine brown sugar, butter and milk. Heat over medium heat until mixture begins to gently boil. Once it comes to a boil time for 2 minutes. Turn burner off and add peanut butter and vanilla. Pour hot mixture over oats and stir rapidly. Drop in spoonfulls on wax paper. Makes 36 cookies.

Tip: Rub stick of butter on the top inside rim of suacepan to prevent mixture from boiling over.

    These were really good. Almost too good because I kept 'tasting' while I was spooning them out but very tasty and really easy to make. I did end up adding a few dark chocolate chips as I love chocolate and peanut butter together! - 10/23/10

    I'm glad you enjoyed them :) The last time I made them, I added only 1 cup of b sugar as well, I thought 2 cups was a little too sweet. Also, if you make them a little smaller and go for 36 cookies they aren't qute so many calories. I had meant to update those changes, will do that now!
