Linguine with Snow Peas, Cucumber & Peanut Sauce

Ingredients
2 gloves garlic1/3 cup peanut butter1/2 tsp red pepper flakes8 oz linguine 2/3 cup low sodium chicken or veggie broth2 TBSP soy sauce1 1/2 TBSP lime juice1/2 lb snow peas cut diagonally into thin slices2 scallions chopped1 cucumber peeled halved lenthwise seeded and sliced thin
Directions
In blender or food processor, combine garlic, soy sauce, peanut butter, broth, lime juice, red pepper flakes. Puree until smooth. cook linguine in large pot of boiling water for 9 minutes or until almost done. Stir in snow peas until pasta is done about 3 minutes more. Drain and toss with peanut sauce, scallions, and cucumber.
