1 C. Amaranth Grain1 T. Red Curry Paste3 C. Swanson (Organic Vegetarian Vegetable Broth)1 C. pea pods, sliced1 C. Broccoli, fresh, chopped1 C. Carrot - raw, chopped1 C. Cauliflower, chopped3 Plum Tomato, Fresh, Raw, Large, chopped1 C. Cucumber Peeled Raw, chopped1 C. Chickpeas (garbanzo beans)3 C. spinach, raw, chopped3 green onions, sliced1 Lemon, fresh squeezed, and the zest1 Lime, fresh squeezed, 2 oz1/4 C. Cilantro, raw, chopped2 T dill1 T. cumin1 T. garlic powder1/4 t. red pepper8 T. Nutritional YeastS & P to taste
In a sauce pan, mix together Amanranth, red curry paste, veggie broth and bring to a boil, reduce heat and simmer for 25 minutes until broth is absorbed. In the mean time, chop all veggies and combine with garbonzo beans in a large bowl. Add lemon & lime juice and lemon zest. Combine. Add cumin, dill, garlic powder, red pepper, salt & pepper combine again. Add Amaranth mixture when close to room temp. Combine. Last add, cilantro and nutritional yeast, then toss. Tastes best when allowed to stand at room temperature for several hours before serving. Makes 12 - 1cup servings.
